JARS by Fabio Viviani is a fast-casual dessert franchise founded by celebrity chef Fabio Viviani. The concept was launched in 2021 and is headquartered in Chicago, Illinois.

JARS focuses on premium, layered desserts served in clear, single-serve mason jars, combining gourmet flavors with a visually distinctive presentation. The brand reflects Fabio Viviani’s culinary expertise and modern approach to accessible indulgence.

The JARS by Fabio Viviani franchise began franchising in 2022 as the company started expanding beyond its original company-owned locations. Franchisees operate dessert shops offering a broad menu of jarred desserts, soft-serve items, refreshers, and specialty beverages. The brand also supports catering and event sales, creating additional revenue opportunities outside of in-store traffic.

JARS differentiates itself through its signature jar format and high-quality ingredients. Each dessert features carefully layered cakes, creams, custards, and toppings designed for both flavor and presentation.

Training

The franchise Jars by Fabio Viviani provides a comprehensive suite of training programs to ensure franchisees and their staff are well-prepared to operate their businesses. These programs include:

  1. HQ Initial Training: This mandatory management training must be completed by the Designated Controlling Principal, General Manager, and two Managers. It includes in-person training conducted at the franchisor’s headquarters or a designated alternate location. Attendance of three trainees is covered by the Initial Franchise Fee; additional trainees incur extra costs.
  2. Third-Party Management/Leadership Training: Franchisees are required to complete an external leadership program at their own expense. Completion is necessary for approval to open the restaurant, and each trainee must submit a training acknowledgment form.
  3. Pre-Opening Assistance and On-Site Training: Around the opening date, the franchisor provides a trained representative for up to 10 days of on-site training and support. This is included in the Initial Franchise Fee for the first franchise unit.
  4. On-Going Annual Training: Franchisees must attend ongoing training for up to five days each year, held at a location designated by the franchisor. This may include attendance at national meetings or annual conventions. Costs such as travel and lodging are the responsibility of the franchisee.
  5. On-Site Remedial Training: If needed, franchisees can request additional training at their location. This is subject to staff availability and incurs a per diem fee along with travel and lodging costs for the franchisor’s personnel.

Territory Protection

The franchise Jars by Fabio Viviani does not offer exclusive territory protection to its franchisees. While franchisees are assigned a defined territory based on factors like geographic area and population density, they are not guaranteed exclusivity.

The franchisor reserves the right to operate or franchise other outlets and distribution channels within the same area. Franchisees are granted a limited form of territorial protection: as long as they are not in default, no other Jars by Fabio Viviani outlet will be opened in their territory.

However, this protection does not extend to non-traditional sites like airports or stadiums, even if they fall within the defined territory. Additionally, the franchisor maintains broad rights to sell products and services through various channels, reducing the practical exclusivity of the territory.
