Pieology Restaurants Franchise FDD, Costs & Fees (2025)

Pieology Restaurants is a fast-casual pizza chain that allows customers to customize their own pizzas with a selection of fresh toppings and sauces, baked to order for a personalized dining experience.

Pieology Pizzeria is a fast-casual pizza franchise offering artisan-style, customizable pizzas. It was founded in 2011 in Fullerton, California, by Carl Chang. The company is now headquartered in Tustin, California. Pieology began franchising in 2012 and has since expanded to numerous locations across the United States and internationally.

The franchise allows customers to build their own pizza using a wide variety of house-made doughs, sauces, and fresh toppings. Orders are baked in high-temperature ovens and served within minutes, offering both speed and customization. In addition to pizzas, the menu includes salads, beverages, and dessert items.

What sets Pieology apart is its commitment to personalization and healthier alternatives. Guests can choose gluten-free, cauliflower, or thin crust options, along with vegan-friendly toppings. The brand also focuses on simplicity in operations and cost-effective supply chain management, making it an appealing choice for franchisees.

Pieology continues to differentiate itself through innovation, community engagement, and strategic partnerships. Inspirational quote boards in each location and a strong emphasis on customer experience help reinforce its unique identity in the fast-casual pizza market.

Training

Pieology provides a structured training and support program to ensure franchisees are well-equipped to run their restaurants efficiently. Here is a summary of the training provided by the franchisor:

  1. Initial Training Program: Before opening, franchisees must attend Pieology’s initial training program. This includes comprehensive instruction on restaurant operations and system standards. It typically covers all operational and administrative functions and must be completed to the franchisor’s satisfaction.
  2. Ongoing Brand Standards Training: Pieology may hold periodic brand standards training courses. These can be mandatory for restaurant personnel and may include in-person and remote sessions. The franchisor can also require franchisees to conduct regular in-house training for staff based on prescribed formats.
  3. Annual Franchisee Meetings: The franchisor may organize annual conventions or meetings which franchisees or their managing directors are required to attend. These gatherings are designed to provide updates, training refreshers, and operational guidance.
  4. Operations Manual Updates and Guidance: Franchisees receive updates to the Operations Manual and ongoing guidance on implementing system standards. While Pieology provides oversight and support, franchisees are responsible for daily operations and compliance with all standards.

Territory Protection

Pieology offers limited territory protection through a defined “Protected Zone” specified in the Franchise Agreement. Within this zone, the franchisor agrees not to open another Pieology location during the agreement term. However, this zone’s scope can vary and is not exclusive.

The protection does not prevent competition from other franchisees or company-owned outlets outside the Protected Zone. Pieology also retains the right to change site criteria and approve new locations nearby. Thus, franchisees receive some protection, but not exclusive market rights.
